Sawaniwan-style Miso Soup

With chicken and plenty of vegetables, this miso soup can be a main dish.

Ingredients (4 servings)

Chicken 50 g
Burdock 1/2
Carrot 1/2
Konjac (Devil’s tongue) 1/2 cake
Daikon radish 1/4
Banno-negi (Thin green onion) 1 stalk
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Cut the chicken into proper sizes and the burdock, carrot and daikon radish into chunks. Cut the banno-negi to 2 ~ 3-cm length. Boil the konjac in water and tear into pieces with a spoon.
  2. Bring the dashi stock to a boil and add the ingredients except for the banno-negi. After the ingredients are cooked, dissolve the miso and boil for a moment.
  3. Serve the miso soup in bowls with the banno-negi sprinkled.

★ A Note

Sawaniwan is a pork broth soup with a lot of vegetables. Chicken, burdock, daikon and carrot all give good tastes in this miso soup.
