Ikiteru Kyushu-san Mutenka Awase Aka
(Living, Kyushu-grown, Additive-free Red Mixed Miso)

Directions

  1. Shave the burdock into slightly larger pieces. Cut the horse meat and hitomoji into proper sizes and shred the ginger thinly into “hari-shoga.”
  2. Place the sake and burdock in the dashi stock and bring to a boil. Add the horse meat. After the ingredients are cooked, add the hitomoji.
  3. After the hitomoji becomes pliant, dissolve the miso and boil for a moment.
  4. Serve the miso soup in bowls with the hari-shoga on top.

★ A Note

Adding sake to the dashi stock reduces the smell of horse meat.
