Hiya-jiru Miso Soup of Miyazaki

This is a famous local cold miso soup (hiya-jiru) of Miyazaki. People there eat it over hot rice.

Ingredients (4 servings)

Dried horse mackerels 2
Cucumber 1
Myoga (Japanese ginger) 2
Green shiso leaf
(Leaf of Japanese basil)

Ground sesame 2 tablespoons
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Grill the dried horse mackerels, remove the bones and hard skin and break up into pieces. Slice the cucumber into round pieces and shred the myoga and green shiso leaf.
  2. Place the dried horse mackerel pieces and the miso in a mortar and grind them while adding the dashi stock little by little. Cool the soup in a refrigerator.
  3. Serve the miso soup in bowls with the ground sesame, cucumber, myoga and shiso leaf on top.
