Stir-fried Bitter Gourd, Squid and Onion Miso Soup

The combination of sesame flavor and vivid ingredients is appetizing.

Ingredients (4 servings)

Goya (Bitter gourd) 1/3
Squid (body) 1
Onion 1/2
Sesame oil 1/2 tablespoon
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Remove the pulp and seeds from the goya, cut into semicircular slices and stir-fry with the sesame oil. Cut the squid and onion into proper sizes.
  2. Bring the dashi stock to a boil and add the squid and onion. After the ingredients are cooked, dissolve the miso and add the goya.
  3. Serve the miso soup in bowls.

★ A Note

Squid is easier to cook and to eat if scored.
