Grated Lotus Root and White Radish Sprout Miso Soup

With chewy grated lotus root (renkon) and nutritious white radish sprouts (kaiwaredaikon), this miso soup has a unique taste for autumn.

Ingredients (4 servings)

Renkon 1 section
Kaiwaredaikon 1/2 pack
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Peel the renkon and grate.
  2. Bring the dashi stock to a boil and add the grated renkon. After the grated renkon is cooked, dissolve the miso and boil for a moment.
  3. Serve the miso soup in bowls with the kaiwaredaikon on top.
