White Miso Oyster Chowder

Milk makes the umami (good taste) of nutritious oysters into a mild taste.

Ingredients (4 servings)

Oysters 8
Daikon radish 1/4
Carrot 1/2
Potato 1
Bacon 2 strips
Parsley 1 stalk
Milk 100 cc
Dashi stock 700 cc
Miso 4 tablespoons

Directions

  1. Wash the oysters quickly with water. Cut the daikon radish, carrot and potato into thin quarter slices. Cut the bacon to 1-cm width and mince the parsley.
  2. Bring the dashi stock to a boil and add the daikon, carrot, potato and bacon. After the ingredients are cooked, add the oysters and dissolve the miso.
  3. Add the milk.
  4. Serve the miso soup in bowls with the minced parsley sprinkled.
