Chinese Cabbage and Chicken Miso Soup

Chinese cabbage is sweet in the hard part. Enjoy Chinese cabbage in season in this miso soup.

Ingredients (4 servings)

Chinese cabbage leaves 2
Chicken thigh 100 g
Mitsuba (Japanese honeywort) A few pieces
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Cut the chicken thigh into proper sizes and slice (like shaving) the Chinese cabbage.
  2. Bring the dashi stock to a boil and add the chicken thigh and Chinese cabbage. After the ingredients are cooked, dissolve the miso and boil for a moment.
  3. Serve the miso soup in bowls with the mitsuba on top.
