Curled Wheat Gluten Cake and Wild Plants Miso Soup

Mild curled wheat gluten cake (uzumaki-fu) and wild plants (sansai) with slight bitterness are well-balanced in this miso soup.

Ingredients (4 servings)

Uzumaki-fu 16 pieces
Boiled sansai 80 g
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Bring the dashi stock to a boil. Add the sansai and boil for a moment.
  2. Lower the heat and dissolve the miso. Add the uzumaki-fu and cook for a short time.
  3. Serve the miso soup in bowls.
