Littleneck Clam and Green Snow Pea Miso Soup

The umami (good taste) of savory Japanese littleneck clams (asari) fills your mouth on each bite.

Ingredients (4 servings)

Asari 120 g
Kinusaya (Green snow peas) 4 pods
Ginger 15 g
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Type of Miso

Kome (Rice) miso

Directions

  1. Soak the asari in salt water to remove the sand and then scrub well with fresh water. Cut the kinusaya diagonally into strips and shred the ginger.
  2. Bring the dashi stock to a boil and add the asari. After the shells open, add the kinusaya and boil for a moment.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls with the shredded ginger on top.

★ A Note

This miso soup gives you a moment of bliss with the flavors of asari, kinusaya and ginger.
