Chicken Breast and Tomato Chinese-style Miso Soup

Enjoy this fancy miso soup of chicken breast and tomato topped with shiso leaves in hot midsummer.

Ingredients (4 servings)

Chicken breast 2 strips
Tomato 1/2
Shiso leaves 2
Sake 1/2 teaspoon
Hot sesame oil 1/4 teaspoon
Chicken stock 800 cc
Miso 3-1/2 tablespoons

Kome (Rice) miso

Directions

  1. Sprinkle the sake over the chicken breast strips, cover with a plastic wrap and heat in a microwave oven for 2 ~ 3 minutes. Then tear the strips into small pieces with hands. Cut the tomato into wedges and shred the shiso leaves thinly.
  2. Bring the chicken stock to a boil, add the chicken strips and tomato and boil for a moment. Lower the heat and dissolve the miso.
  3. Serve the miso soup in bowls with the shredded shiso leaves on top and hot sesame oil sprinkled.

★ A Note

Sour-sweet tomato and fragrant shiso leaves are good for hot summer.
