Thread-sail Filefish and Green Onion Miso Soup

Instead of white Japanese leek, thread-sail filefish (kawahagi) having white fluffy meat looks better with vivid green onion (ao-negi).

Ingredients (4 servings)

Kawahagi 1
Ao-negi 2 stalks
Ichimi-togarashi (Cayenne pepper powder) A pinch
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Cut the kawahagi into large chunks and the ao-negi to 2 ~ 3-cm length.
  2. Bring the dashi stock to a boil and add the kawahagi to cook.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls with the ao-negi on top and the ichimi-togarashi sprinkled to taste.
