Vitamin D Miso Soup

The umami (good taste) of dried ingredients is condensed in this nutritious miso soup.

Ingredients (4 servings)

Kiriboshi-daikon (Dried daikon strips) 8 g
Dried shiitake mushrooms 2
Bacon 2 strips
Iriko (Dried small sardines) 12 g
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Rehydrate the kiriboshi-daikon and dried shiitake mushrooms in water and cut into proper sizes. Cut the bacon to 1-cm width.
  2. Boil the kiriboshi-daikon, dried shiitake, iriko and bacon in the dashi stock.
  3. After the ingredients are cooked, lower the heat and dissolve the miso. Serve the miso soup in bowls.
