Mixed Grains and Daikon Radish Miso Soup

Various textures of mixed grains go well with soft daikon radish in this miso soup.

Ingredients (4 servings)

Zakkoku-mai
(Rice with mixed grains)
30 g
Daikon radish 4 cm
Gobo (Burdock) 1/3
Konegi (Thin green onion) 2 stalks
Dashi stock 800 cc
Miso 3-1/2 tablespoons

Directions

  1. Boil the zakkoku-mai to make it soft. Quarter-slice the daikon radish and shave the gobo into thin pieces. Cut the konegi diagonally into pieces.
  2. Boil the daikon and gobo in the dashi stock until tender. Add the zakkoku-mai and boil for a moment.
  3. Lower the heat and dissolve the miso. Serve the miso soup in bowls with the konegi sprinkled.
