Kanato Pufferfish and Japanese Leek Miso Soup

Kanato-fugu is a type of harmless pufferfish and is firm-textured and best to eat in winter. It goes well with Japanese leek (naga-negi) in this miso soup.

Ingredients (4 servings)

Kanato-fugu 4
Naga-negi 1
Shichimi-togarashi (Japanese mixed spices) A dash
Water 800 cc
Miso 3-1/2 tablespoons

Kome (Rice) miso

Directions

  1. Cut the kanato-fugu into proper sizes and slice the naga-negi diagonally.
  2. Bring the water to a boil and add the kanato-fugu. After the kanato-fugu is cooked, dissolve the miso and boil for a moment.
  3. Serve the miso soup in bowls with the naga-negi and shichimi-togarashi sprinkled.

With savory kanato-fugu and naga-negi sweetened in winter, this miso soup is very tasty.
